Make sure your secondry server has a higher MX preference
value when adding the DNS records for your site. e.g. 
If your primary server is 0 then anything higher, say..10

As far as the sendmail config goes - set it up exactly the
same as your primary.

Install the latest version of sendmail - apart from the obvious
bugfixes it also denies relaying by default. You would then have 
to add the hosts you would like to relay to to the /etc/mail/access file.
